Darth Eggplant Posted July 14, 2003 Share Posted July 14, 2003 tonight I made an ultimate Tex Mex Pizza. here is what goes into an eggplant gourmet pizza. (1)the pizza dough gets made in my bread maker (2)the Old El Paso ingredients: one can Old El Paso Refried beans one jar of Old El Paso Chunky Salsa (medium) one package of Old El Paso Fahita mix (3)the cheese 'Sargento' brand Tex Mex a blend of six cheeses: Pepper Jack Cheddar Monterey Jack Queso Quesadilla Blanco and Asadero (4)the remaining ingredients boneless chicken red pepper green pepper orange pepper black olives onions garlic mushrooms (it's a knee jerk Hobbit reaction) olive oil (good for the heart & gives the pizza a neat golden crust) (5)pre preperation instructions cut and dice up all the peppers, mushrooms, olives, onions; and crush the garlic before hand place them in seperate little containers or dishes (6)pre fahita mix instructions take bonesless chicken (or steak if you like) cut them into good sized chunks cook them in Old El Paso mixture following instructions, cook meat almost all the way through the pizza oven stage finishes it off, because you don't want to invite Sam & Ella to dinner (7)making the piZZa turn your oven on to 350 F place oven rack in middle take pizza dough you made earlier and stored in the fridge, add flour, flip, pound or mangle it into a circle shape and place on your pizza tray coat entire surface with olive oil (virgin) it is supose to be heart healthy plus it makes your pizza oooey goooey golden crunchy now using knife or something spread thin coating of refried beans on crust, next add chunk salsa. (salsa has more water than tomatoe sause so try to drain most of it away. now sprinkle light coating of chesse over top of bean\salsa food stuff goo now make your pizza festive by chucking in random pinjata style all your red\green and orange peppers next go crazy with black olives, crushed garlic and onions (note don't go too loco cause the meat still has to go on. *if you are a vegetarian go nuts with dem veggies.* **and add mushrooms this is optional** ***so to are Ja-lap-peno peppers.*** now add the chicken fahita chuncks use the rest of the cheese if you enjoy cheese all over top of everything. place in the oven, the thicker the dough the longer the cooking time also depends on the oven (mine was like 20 minutes or so) or when it smells really good plus peek in at it to make sure it does not burn take out and place on wooden serving board let it sit for 15 minutes if you are not mad with hunger cause everything settles and consolidates, plus E Hola this puppy is Hot. cut it into 8 or 4 pieces or just drag it to the table and chomp in; if your not in the sharing mood. enjoy. Darth Eggplant Posted July 14, 2003 Author Share Posted July 14, 2003 i once worked in a pizza place a fav job, saddly i busted my foot and had to be off it for 6 weeks the guy had to let me go as he could not be without a pizza maker that long. anyhow i usually sat or sunday at least every other week make pizza. personally even though this was experimental it was and is good. I am having the rest for lunch today. it really is one big flat buritto or enchalada or whatever, if you like tex-mex cuisine, it although wierd and unusual like myself is not too too bad. Darth Eggplant Posted July 15, 2003 Author Share Posted July 15, 2003 i sent my receipt to Old El Paso itself. they replied that they were forwarding my receipt to their food research division. they informed me that unfortunately they do not pay people or credit them for their receipt submissions, however if one day you ever see a receipt for chicken fahita or Old El Paso Pizza on a product, you saw it here first in Yoda's Swamp 'how you get so big eating food of this kind?'
