Yes, use the playermodel command. type "playermodel" in the console to see how to use it.

 

playermodel jedi_hm head_a1 torso_a1 lower_a1

 

Would change you to the human male, first head, first torso, first lower body.

 

sex m

 

Will change your sounds to the male.

 

But to my knowledge this does not affect the cutscenes.
