Multi-monitor gaming question

I'm not sure if this is something that has been discussed in the past or not, but hopefully someone may be able to help. I have had a multi Monitor setup for some time, and I have recently noticed that some games are coming with a multi monitor resolution setting in the video setup options. For instance; In Jedi Knight: Jedi Academy, there is an option to use "surround Gaming" at 2400 x 600, which is 3 monitors at 800 x 600. I select it, but it still plays in one screen. Do I need to install some 3rd Party software to use the game this way, or what? My current set up is Two monitors running off a ATI Radeon 9800 pro (AGP) and one off an ATI 7500 (PCI). I don't use the Hydravision software, cause the Windows Desktop management using the Catalyst 3.8 seems to be easier with less overhead. If anyone has in helpful info, I'd apreciate it. Thanks!
