MacNab13
I've read many suggestions that you should practice saber fighting in the multi-player mode, but I find the enemy AI in single player is completely different than the bot AI in multi-player. I recommend saving the game every time you get in a saber fight in the single player game, then practice by playing each encounter several times. The outcome is always different and you can try different techniques and strategies. You can then compare what works and what doesn't by the results of the fight. I use force powers when I can, move around and jump a lot, and use fast combo attacks to take out the bad guys. I especially like to jump on top of a bad guy, knocking him to the ground, then finishing him off - a very cool move sure to make you say 'Yeeesss!!'. It is really cool to deliver a finishing blow and watch your character spin around in slow-mo and pass your saber through the enemy's body a second time. Game Commander also works very well with Jedi Knight II for using force powers in saber duels - I recommend it highly.
Demolisher
I'm still pulling my hair out and going crazy with single player easy skill, but in multiplayer I use force healing a lot. Also, I stick to medium stance and straffe a lot and try never to stand still. I have the stance change bound to the mousewheel too; this makes switching easy. The actual command is SaberAttackCycle
