The server more than likely had double sided saber activated, in which case you either have to turn saber off then on again for dual blade, or type /thedestroyer in the console. There are several server side/client side mods that allow double bladed saber to be used. Vulcanis Adminmod, Jedi Mod and Jedi Plus are a few.
