In order to enchant, you have to destroy an item with that enchantment at an enchanting bench.

Trolls got easier for me around level 20, but then again I didn't use magic or enchantments so you may have better luck. (EDIT: I lied. I did use shouts, which I don't consider magic. I also wore enchanted rings and amulets for buffs)

Someone pushed a small patch via Steam the other night and I guess it reversed some of mods I had applied (specifically the 4gb memory addressing thing). Unfortunately, it appears that the random crashing is back
