I've done it on Knight and Master. Never played the other difficulties but I dont see why it wouldnt work on them.

on the map where you have force speed 3...the one where you fight all the sith guys...i use jedi knight difficulty...you have to have the sabre on for it to work.

 

if you have the sabre off and you push and hold the use key it wont do the force speed dodge, turn on your light sabre face the enemy, shooting blaster or whatever, then hold your use key and do nothing else(press nothing else), it'll force dodge, good for dodging a sniper...if you see him. but you quickly run out of force power, in like 4 dodges or so.

I've discovered that if you simply press the use button when you see a blaster bolt/disrupter laser coming at you, you will automatically dodge. It seems that in order to dodge something you merely need to press the use button.
