Well heres my opinion, assuming you have all the ships unlocked already:

Ambush at Mos Eisley..........V-Wing

Rendezvous on Barkesh.........V-Wing

Search for the Nonnah.........V-Wing

Defection at Corellia.........Speeder

Liberation of Gerrard V.......V-Wing

The Jade Moon.................V-Wing

Imperial Constructon Yards....Speeder

Assault on Kile II............V-Wing

Rescue on Kessel..............X-Wing

Prisons of Kessel.............V-Wing

Battle Above Taloraan.........A-Wing

Escape From Fest..............Speeder

Blockade on Chandrilla........V-Wing

Raid on Sullust...............Y-Wing

Moff Seerdons Revenge.........V-Wing

Battle of Calamari............V-Wing

Just use the V-Wing whenever you can, its the best ship in just about every way (assuming you have the cluster seeker missiles).

Hey Conor are you nuts!

The Interceptor has no shields! You get shot down to easily! The worst level to use the Interceptor would be on Sullust!

I'll have you know that Sullust with the Interceptor is my favorite mission in the game. The missiles are everywhere! I love it. I played it over and over and over again. I couldn't beat the last two levels with the interceptor though. That moff in his shuttle kept hitting me and I got bored of Calamari. It is so much fun dodging in the interceptor.
