List of variables for server.cfg

Is there a list anywhere of all of the commands available? I have pieced some together from various posts on this board but it is fairly tedious.

That's because admining a Quake 3 engine game is tedious (if you've never done it before). There aren't any compiled lists of JK2 cvars or commands that I know of, but first thing to do is check the Dedicated Server forum. You'll find several different config files and cvars/commands there. You can also type 'cmdlist' in the console and dump it to a file. Do the same with 'cvarlist'. Lastly, you can check any of a million Quake websites because JK2 runs on the Quake 3:Team Arena engine and most of the commands and cvars are the same.
