It wouldn't be that difficult to change, and would rake in a lot more money for lucasarts AND more interest for grim fandango, so gf2 would be more of a possibility. But let's get serious, it's been over 4 years since the game's release. A console port for GF is far less likely than a sequel/prequel. That's not to say that a new GF game is very likely in the near future, but there's always hope. Sorry, that came off as a bit optimistic. As for a port, unless a graphical overhaul is involved, I seriously doubt it. And like met, I'd like to see the big TS involved in any development.
