The model is the body for the skin. Take the Kyle Katarn model from the game, edit him so that he looks like he just got new clothes. That's a skin.

 

Now in terms of player models, let's say you want a character not originally found in the game, like Darth Maul. You either request him or you build him.

 

This pic was derived from Rebel_Spy's "WIP: Veggeto" thread, we'll use this as an example:

No colors on him yet, right? That's a model base, onto which the skin is applied to.

 

This is what he'll look alike after the skin is applied:

vegetto_wip_07.txt

 

There may be others who have a different point of view than myself, but this is basically what the difference is between a model and a skin.
