If you are talking about Multiplayer, there is a very nice Help section with instructions and animations demonstrating the moves.

 

Go to Play, Rules, Moves.

What do you mean by "Change old stances"?

Take Them and Make New Stances.

Setforceall 3 (if this is SP) or setsaberall 3

 

(to enable cheats first type helpusobi 1 in the console).

 

This will give you three "new stances" with "new moves."

 

To look up your normal SP moves (similar to what Amidala said above) start a game, and mid game bring up the menu (default.. TAB) and then click on "moves."

 

If you want to create brand new moves and stances not in the game, you should download the JA MP SDK (see Lucasfiles.com) and learn editing.
