(AFAIK) modding on PC is one thing but it's a completely different universe on game consoles. The only way (that I know of) to mod console games is to mod the console itself with certain types of non-shelved aftermarket modifications. Most are expensive and some are highly illegal. I wouldn't recommend it. You'd be better off modding for PC.

I do know of a site that has modded XBox saves for K1 & TSL.

You can mod the Xbox versions of KOTOR. In order to do this though you must have a modded Xbox (either soft-modded or modchipped). That's not illegal down in my neck of the woods, but it is in a lot of places, so I doubt the admins will tolerate discussion of it here.
