If everything in the movie is canon then easters eggs are canon as well (in which case, Maul's double saber wouldn't NOT be the only canon double saber, provided someone is using a lightstaff in the arnea). For that matter, the TIE fighter/X-wing flying around Corescant (which I've yet to see evidence of) would also be canon... as would the shoe that is apparently viewable sometime during the attack on the second Death Star. "BUT" easter eggs are put into the movies for pure amusment for the hardcore fans and/or the special fx crew. A flaming cow in outer space? come on.
