I personally use the dodge and burn method, I find it works well for me. Others prefer Airbrushing shadows and highlights, then smudging them. I haven't played around much with this method personally, but many swear by it. One thing you should probably keep in mind is keep things in layers. For the basic shape of the clothes and the shading/folding/etc, use one layer, grayscale. For the texture of the clothing, throw it in a new layer and do an overlay or whatever blending method looks best. For dirt and stains and such, do another new layer with overlay or whatever blending. It's best to avoid shading the texture layer, especially if you're using the Dodge and Burn method.
