The point of strategy games is you can do things differently from the movies/history/developer-created backstory. If the Rebels want to try and field a massive infantry army and take the fight ot Coruscant, what's stopping them? If you want to try, try to field a massive army with the Rebels. You can try to pump out tons of troops if you want.
