The Star Wars : Chronicles team just released their demo of their mod, and it's the fight with the Battle Droids on the Droid Control Ship from Star Wars Episode I. There's also Movie Duels, which has a version 1 available, that has most of the major lightsaber duels from the Prequels (version 2 will finally have Duel Of The Fates as well as Mace Windu vs. Palpatine and lots of others). Check modddb.com and JK3Files. There's tons of good mods for Jedi Academy these days. Oh, and not to toot my own horn, but (insert shameless plug here) do try out the Dark Forces mod. It's a pretty good multiplayer mod based on stuff that appeared in the movies, and some that didn't. It's class-based and whatnot, so I think you and your brother might enjoy it.
