Those screens are from when the devs test the game. When they test it they use any character on any world and also give some non-Jedi characters lightsabers. If you look in the Gamespot Q&A you'll see a picture of Carth with two sabers doing a flip power attack.

Carth is not weilding lightsabres, sometimes when characters do special attacks their hands and swords go red and stuff like that. Or maybe I could be wrong..

Or maybe I could be wrong.. Nope, you're right. If you look closely you'll notice that they're dueling swords with a yellow glow.
