Are jedi actually that amazing?

Well, in a vehicle a jedi is not much better than a really good pilot, physical constrain of the vehicle is still mostly there.

 

Though as far as Order 66 is concerned, I think the surprise factor and the jedi's mercy on their close clonetroopers may play against them.

 

But yes Luke getting surprised is partly due to him not really skilled at the time relatively.

On Kotor II, an Jedi Assassin (I'm not going to say who he's to avoid spoilers, but whoever finished the game knows who he's) tells your character that, differently of everyone's beliefs, Jedi aren't so difficulty to kill, you just have to mask your presence. His method was "throwing" a barrier of emotions around him, lust, jealousy, envy, and then, any Force Sensitive would be blind to him.

 

Again on Kotor, another character, tells you how important the element of surprise is, to kill a Jedi. Placing, mines, detonators, traps, are best way.

Well, that takes quite a bit of training to be counting cards (or throwing a barrier of emotions) to prevent jedi scanning thru your mind, or sensing danger from you. Also, we are not sure if such ability requires a certain degree of force sensitiveness, due to the example you state.

 

As for your other example, it is said that inorganics have an advantage of being so different from meatbags that their "emotion"/intension (if there is such a thing) can be easily hidden from the jedis.

 

Well the Jedi still have really great reflex, but with ample help and equipment, and careful planning, a jedi is just a bit harder to kill then yet another expert warrior.

 

Remember, part of the effect from a jedi comes from them "being a jedi", as the awe and sometimes even fear of the jedi tricks they know makes them seem way more powerful than what they really are.

 

Another thing is that usually jedi do not use weaponary(or force power even) of extreme destruction, meaning that a jedi's mercy can be used against him, like how the "JK/JA game stand in" as mentioned in example A, as he finish off that dumb female jedi.
