I like the one by Batu Eritenel from the IMuse Island site you mentioned. Highland Productions is fantastic! And since this is about the source for LucasArts fan music I can't help but praise another artist featured at that site: Bart Klepka. With the big exception of "Anna's Theme - Midnight Mix" I can recommend the lot.

 

You might want to take a look at LucasFans' music section (in downloads). There's no new fan music, but music from most LucasArts adventure games.
