hmmm I read somewhere on the Splash Damage forums or on the list of updated features somwhere that the option was removed due to compatability or something like that. (maybe it wasn't working as intended) I could be wrong though... However... My brushes have not been caulked with the latest verssions of Q3map2 (my test maps usualy aren't)

Even Raven Software wasn't worrying about caulking every hidden face. Q3Map2 does a good job there and the few face which might sneak through can't be a big problem after all.

 

Plus you can run through the map at the end with r_showtris 1 to if there are hidden faces rendered and caulk them yourself.
