Or maybe it was on the opposite side of the Earth. If not, then compare it to the size of Earth... Mars has two moons that are much larger than the spacedock, but you can't actually see them without a high-magnification telescope when you look at Mars.

Even if it were in the field of view, the size of the spacedock would actually be quite small if not seen up close. Go about 10,000 miles away and it's only just visible to the naked eye.

Because the borg saw it as a threat and destroyed it? or maybe the Jem'Hadar got it during their attack on earth in the Dominion war

More likely it was on the wrong side of the planet to get in a fight with the Borg Cube or had been moved. Most of the Shipbuilding Facilities were moved to Orbit Mars by the 24th century. Starbases supposedly had a lot of weapon systems and could take on small fleets of ships.

Anyways, I still think they made a huge mistake in messing with the ship.
