As for some of the changes, I think they wanted to make Indy competitive.

Yeah, I'm pretty sure it's not that. The Indy series is basically 'stuff that George and Steve do and to hell with what everyone else thinks'. That's what makes it good.

The scene where Indy and Marion were stuck in the "dry" sand pit definitely has to be one of my favourite scenes in the movie.

It had already healed him by that time so I guess he just missed out on the immorality part and not the healing.
