More pagan adapted to a Christian setting, to be honest. >_> I'm sure Umberto Eco probably has book or an essay on Christian symbolism; just search for him on Amazon.

I'm not finding anything specific on google, but if there is such a book meeting your preferences, I'd first check the public library. Edit: Should have read the whole thread, and I would've noticed purifier's post... Even so, at the library you can check out books free, unlike amazon.
